TRU Accolades reopens Sept. 16

Make your reservations early. One of Kamloops best-kept secrets is reopening to the public.

TRU’s Accolades Restaurant, in hiatus for the past year, is taking reservations as it prepares to open doors again on Sept. 16. A training facility for the culinary arts program, the restaurant at one time ranked among the top 100 dining establishments in Canada.

“It was really a chance to look at how we do things and improve on them,” said Ed Walker, chair and instructor in the program. “It had evolved into more of a business than for students.”

There is high demand for trained cooks — a demand that is projected to grow, particularly in the southern Interior in the next few years — and instructors are working to ensure that the best chefs in the country come from TRU.

“Industry loves our students because of the real-life kitchen and restaurant experience we provide,” Walker said.

Budding chefs and hospitality specialists need a training ground, and Accolades provides senior culinary students with a venue where they can provide discerning patrons with the latest trends and techniques in food preparation and service.

Patrons can expect local foods to be featured prominently on the menu, along with local wines, reflecting the valley’s four wineries. Opening nights have been halved to just two nights a week to allow for more training.

A fresh twist to the front of the house this year is having a past student come back to teach in Accolades. Maeghan Summers graduated from the Hotel and Resort Diploma program in 2007 and is passionate about the program that developed her abilities and facilitated her growth in the hospitality industry. Maeghan is now general manager and partner of a local favourite, The Noble Pig Brewhouse. 

“I am looking forward to creating memorable experiences for guests and students alike in a new setting and to be back where it all started,” Summers said.

Starting Sept. 17, Accolades will be open Wednesday and Thursday nights. Service starts at 6 p.m. for 30-40 guests per night up to Dec 10.
